Ingredients
500ml Greek yogurt
½ cucumber
2 cloves of garlic
Fresh chives Olive oil
Ground black pepper
Pinch of salt
Let your yogurt drain in a damp cloth. Minimum of two hours, the longer you let the yogurt drain, the thicker the tzatziki will become. You can do this the evening before as well. Peel the cucumber and remove the seeds with a spoon. Grate the cucumber and sprinkle with salt. Just like the yogurt, let it drain for at least two hours (or the evening before).
Mix the yogurt and cucumber together. Add the garlic using a garlic press. Add ground pepper and chop fresh chives to taste. Stir well, and finally, add a splash of olive oil to make the yogurt smooth.
